Crafted by Navneet Singh in the cool-climate Derwent Valley, this is a brilliantly textural and wild take on Tasmanian Sauvignon Blanc. Made with a strict minimal-intervention philosophy, the fruit is whole-bunch pressed and fermented in seasoned demi-muids, resulting in a beautifully complex, lightly cloudy pour. It leaps from the glass with vibrant notes of passionfruit, tart gooseberry, and fresh basil, all wrapped up in a soft, food-friendly texture that begs to be paired with fresh goat cheese, asparagus tarts, or wood-fired seafood.
