Fermented with wild yeast and bottled unfined and unfiltered, it hums with electric tension, delivering vibrant notes of makrut lime leaf, crisp white peach, and a profound, crushed-quartz minerality. Bone-dry, beautifully textural, and bursting with energy, it is a phenomenal pairing for fresh kingfish crudo, spicy green papaya salad, or pan-seared scallops.
