Domaine Simha 'Paysan Eh Bien' Pinot Noir, Derwent Valley TAS

Crafted by Navneet Singh in Tasmania's cool-climate Derwent Valley, this minimal-intervention Pinot Noir is a wonderfully vibrant and crunchy 'glou-glou' style red. Fermented with wild yeasts and bottled unfined and unfiltered, it leaps from the glass with bright notes of wild raspberry, tart cherry, and a subtle undercurrent of earthy, autumnal spice. Energetic, fresh, and exceptionally drinkable, it is brilliant when served with a slight chill alongside charcuterie, duck rillettes, or a wood-fired mushroom pizza.
